Kookoo Sabzi

3 bunch spinach
2 bunch parsley
1 bunch cilantro
1 bunch green onion
1 whole onion
4-5 egg
Salt
Pepper
Oil

Grate/purée the onion.  Add it to the mixing bowl.  Finely chop all vegetables.  Add to mixing bowl.
Add eggs to the bowl one at a time and mix with your hand.  Add salt and pepper to taste.

The mixture should be fully wet, but without excess eggs.

Add the mixture to a frying pan hot with about 2 tablespoons of oil.   Place a plate or lid over the top. Let cook for 3-5 minutes.  Flip over carefully while
Using the plate.

Serve with yogurt and bread.
